It’s January and most of us have seen plummeting temperatures and snow-filled skies lately. This meant that we need a good winter-warmer recipe for January’s Sunvil Supper Club, and what better way to do that than a good soup?

Soup might not be the first dish that comes to mind when you think of Portugal. The rolling countryside of the Alentejo, the beaches of the Algarve and the long history of Lisbon and Porto might all make you think of sun-kissed summer afternoons and balmy evenings; but almost every European culture has soup somewhere in its culinary repertoire – and in Portugal it is a regular for celebrations.

Anyone who has been to a traditional celebration in Portugal – like a wedding, a birthday or the Festa de São João, or festival of St John, in Porto – will probably have encountered this heart-warming soup. Once the reserve of poor countryside peasants and made with just potatoes, kale and water, caldo verde has been given a flavour boost to bring to everybody. Now made with stock (instead of the water), onions and garlic, this dish has become much more popular, with the best recipes also containing the gentle spice of paprika, coming from slices of local chorizo sausage, which is added to boost the flavour. This soup is a great pick-me-up and is sure-fire way to beat anything January throws at you.
